Upside Down Taco Pizza

Ingredients:
1lb. ground beef
1 packet of taco seasoning
1 1/2 cups of shredded cheese {I used the Mexican style cheese blend}
1 box of JIFFY corn muffin mix  {my FAVORITE!!!!!}
Directions:
Preheat oven to 400 degrees.  Brown meat in pan.  Drain and stir in taco seasoning & 3/4 cup water.  Cook on low for 5 minutes.  In a separate bowl, mix the corn muffin mix according to the package.  Remove meat from stove & place in an 8x8 baking dish.  Cover with cheese.  Take the corn muffin mixture and pour on top of the cheese.  Cook for 18-20 minutes or until golden brown :)

Slow Cooker Jambalaya

Ingredients:

1 lb. boneless, skinless chicken breasts, cubed
1/2 lb. andouille sausage, diced
1 {28 oz.} can diced tomatoes
1 medium onion, chopped
1 green bell pepper, seeded & chopped
1 stalk celery, chopped
1 cup chicken broth
2 tsp. dried oregano
2 tsp. cajun or creole seasoning {I use either Tony Chachere’s or
1 tsp. hot sauce {I use Tobasco}
2 bay leaves
1/2 tsp. dried thyme
1 lb. frozen shrimp, peeled & thawed
2 cups cooked rice {I used 2 boil in a bags!!}

Directions:

In a crock pot, combine chicken, sausage, tomatoes, onion, green pepper, celery, & chicken broth. Stir in oregano, cajun seasoning, hot sauce, bay leaves, & thyme. Cover & cook on low for 7 hours…or on high for 3 hours. Stir in thawed shrimp, cover, and heat until shrimp are cooked through {about 5 minutes}. Discard bay leaves and spoon mixture over rice to serve.

Pretty darn good :)

French Onion Pot Roast

This recipe seriously takes like 5 minutes prep… and then…It sits all day and smells the house up with yummy pot roast aroma. Love it.

Ingredients:

  • 6 small red potatoes
  • 4 medium carrots, cut into 1" pieces
  • 1 large onion, cut into wedges
  • 4-4.5 lb chuck roast
  • 1/4 t salt
  • 1/2 t ground pepper
  • 1 can condensed French Onion soup
  • 1 can condensed Golden Mushroom soup
  • 1/2 c water
  • 1 bay leaf

Directions:

Place first 3 ingredients in a slow cooker. Place roast on vegetables, and sprinkle with salt and pepper.

Whisk together both soups and water; pour mixture evenly over beef. Add bay leaf. Cover and cook on HIGH 1 hour, reduce heat to LOW and cook 7 hours or until tender.

Remove roast and vegetables from slow cooker, keep warm. Skim fat from cooking juices. Serve cooking juices with roast and vegetables if desired.

Crescent Lasagna

This is the best thing I have ever eaten in my life. I’ve had it since I was a little girl and I would get SO excited when my mom or sister-in-law would make it! Now, I get to make it for my family! And they love it! It’s soooo good. Hope you enjoy it too!

Ingredients:
1 lb. ground beef
2 rolls of crescents
1 can tomato paste
1 egg
1 tub of small curd cottage cheese
2/3 cup mozzarella cheese
1/4 cup parmesan cheese
1 tsp. parsley
1 tsp. oregano
salt and pepper to taste

Directions:
Brown beef in skillet. Add parsley, oregano, salt and pepper, and tomato paste to beef. Stir thoroughly.

While browning the beef, mix cottage cheese, egg and parmesan together in a medium bowl.
Line a 13x9 pan with one roll of crescents.
Top crescents with one half of meat mixture. Pour cottage cheese mixture over the meat.

Add remaining beef mixture and top with mozzarella.

Cover with roll of crescents and bake at 350 for 25 minutes.

Easy Stroganoff

This is a super easy and yummy recipe! Great for when you’ve had a busy day and don’t feel like cooking...but need to!
Ingredients:
1 lb. ground turkey or sausage, browned, or leftover chicken, chopped
1 can cream of mushroom soup
4 oz. cream cheese, cut up
1/3 c. shredded pepper jack cheese
1/2 - 1c. milk
1 pkg. egg noodles, cooked and drained

Directions:

Brown turkey, add cream of mushroom soup and cream cheese. Stir over med-low heat until cream cheese melts.

Add milk and pepper jack cheese to the consistency of your choice. Add noodles, stir and serve. YUM!!!

You can also omit the noodles and serve over biscuits.

Goulash

 

So, I totally forgot to take a picture tonight when I made this. My bad. But here's the recipe. Super easy meal and it turned out to be really good! It was a little spicy but even the kids liked it and they are pretty picky eaters.

Ingredients:

1 lb ground beef
1/2 cup chopped onion
1 can red kidney beans(rinsed and drained)
1 8 ounce can tomato sauce
1 can Rotel
1/2 cup elbow macaroni
1/4 cup water
2 tsp. chili powder
1/2 tsp. garlic salt
1 cup shredded Monterey Jack Cheese or Cheddar

Directions:

Brown beef and onions. Stir in beans, tomato sauce, Rotel, uncooked macaroni, water, chili power, and garlic salt. Bring to boiling and reduce heat. Simmer and cover about 20 minutes. Stirring often. Sprinkle with cheese then cover and heat about 2 minutes more. I loved this dinner and I even forgot the cheese.

Sliders!

We had sliders for dinner tonight. SO easy to make and really yummy too! No grill involved, which is even better because it's SO HOT outside!!


Ingredients:
1/2 medium onion
1/4 cup finely chopped fresh parsley
1 1/2 lb 90% lean ground beef
2 garlic cloves, pressed
1 tsp salt
6 slices American cheese
8 hot dog buns
24 hambuger dill pickle slices
Directions:
Preheat oven to 450 and finely chop the onion and parsley
Combine beef, onion, parsley, garlic, and salt and mix well. Press beef mixture evenly over bottom of large pan. Bake 10 - 12 minutes or until beef is no longer pink.
Meanwhile, cut cheese into quarters; set aside. Trim about 1/4 in off end of each hot dog bun, then slice buns into thirds for a total of 24 square mini buns; set aside
Remove meat from oven and pour off juices if necessary. Cut beef mixture into 24 squares.
Top each burger with one pickle and one piece of cheese. Place one bun top onto each burger; top with one bun bottom. Cover with foil and bake 3-5 minutes or until cheese is melted and buns are warm.

Egg Casserole

I got this recipe off the back of a Jimmy Dean's Sausage package :) SUPER yummy and I love that it lasts us for a few mornings of breakfast!



Ingredients:

6 slices bread, cubed
1 pound sausage, browned, drained
1 1/2 cups shredded Cheddar cheese
8 each eggs, beaten
2 cups milk
1 teaspoon,
salt & pepper to taste

Directions:
Cube bread and place evenly in greased 9x13 pan or baking dish. Sprinkle evenly with sausage and cheese. Mix eggs, milk, salt and pepper. Pour over ingredients in pan. May cover and chill overnight. (if left overnight, remove from refrigerator 15 minutes before baking). Bake 45 minutes at 325 degrees or until set. Cut into squares to serve.

Meat Stuffed Tomatoes

This is super yummy! Reminds me of stuffed bell peppers, but the tomato is so good too and not as spicy!

Ingredients:
4 Large tomatoes {I made 8}
1 lb of ground beef {I used turkey}
1 beaten egg
Salt and pepper
1 cup cooked rice
Small chopped onion
Directions:
Cut a slice off the tops of 4 large washed tomatoes and save.
Scoop out insides with teaspoon and save.
Mix 1 pound of ground meat with 1/2 cup of cooked rice, chopped onion, 1 beaten egg, salt and pepper.
Use the mixture and fill the scooped out tomatoes shells then cover with sliced tomato top.
Put topside down in baking pan and add about 1 inch of water. Bake at 325-F for 45 minutes or until cooked.

Sauce for topping: {Optional}
In a fry pan, brown 3 tablespoon flour in butter, mash the saved tomato pulp and add to pan, add a little sugar to slightly sweeten the sauce, add 1/4 teaspoon ground oregano. Cook until thick. When ready to serve, pour sauce over the stuffed tomatoes.

Mom's Meatloaf

I LOVE meatloaf! This is my mom's recipe and I can remember helping her make it ever since I was little. It's so sweet to now make these recipes with my own little family! If you don't like meatloaf, you should at least try this recipe!



Ingredients:
1 pound lean ground beef {I use ground turkey}
2/3 cup milk
1/2 cup cracker crumbs {granola is really good too}
1/4 cup ketchup
1/2 worcestershire sauce
1/2 cup finely chopped onion
1 teaspoon salt
1/8 teaspoon black pepper
1 egg, beaten

Directions:
 
Mix all ingredients together in loaf pan (saves cleaning extra dishes). Form into a loaf and top with ketchup. Bake at 350° for about 1 hour.

Manicotti

I love this recipe! I've tweaked to make it my own and I think it's perfect. Try it out and see what you think!


  • 1 (8 ounce) package manicotti pasta




  • 1 pound lean ground beef {I used ground turkey}




  • 1 container cottage cheese




  • 1/2 cup shredded mozzarella cheese




  • 1/2 cup grated Parmesan cheese




  • Italian seasonings to taste




  • Salt and pepper to taste




  • 1 (32 ounce) jar spaghetti sauce




  • -Bring a large pot of lightly salted water to a boil. Add in some oil so the pasta doesn't stick together. Add pasta and cook for 8 to 10 minutes or until al dente. Drain and cool.
    -Meanwhile, in a large skillet brown beef on medium heat. Drain and cool.
    -Preheat oven to 350 degrees F (175 degrees C).
    -Combine beef, cottage cheese, Parmesan cheese, and italian seasonings. Mix well. Stuff shells with mixture.
    -Lightly grease a 9x13 inch baking dish. Pour enough spaghetti sauce in dish to cover the bottom. Place stuffed noodles in the dish. Top with remaining spaghetti sauce. Bake for 50 minutes.
    -When it's done, sprinkle some mozzarella on top and put in back in the oven for a few minutes to let it melt.
